Sao Pedro da Canastra comes from the family farm in Serra da Canastra, Brazil, at 1,250 m. The Acaua variety uses a rare natural method called Passa Fermented: cherries ferment on the branch before picking. In the cup: milk chocolate and almonds up front, with a deep note of raisins and a full, comforting finish.
