The default settings on an automatic espresso machine are not calibrated for specialty coffee. They are calibrated for commercial coffees with dark roasting and low acidity. An EXPLORE coffee with citrus notes or a VISION with floral notes reacts differently to the same parameters and can taste sharp or flat at standard settings. There is nothing wrong with the machine and nothing wrong with the coffee: it is a mismatch between the profile and the extraction settings. Dialing in takes 3-4 shots.

Why the default settings don't work with specialty coffee
Manufacturers calibrate the default settings for commercial coffees: medium to dark roast, neutral profile, low acidity. They work well for 90% of the coffees on a supermarket shelf.
Specialty coffees have different density and more distinctive sensory profiles. An EXPLORE with strawberry or citrus notes has higher acidity than a commercial blend. At the default settings, that acidity can taste sharp in the first two or three cups. A VISION with floral notes loses its delicate notes during extraction when the grind is too fine or the strength too high.
It is not a defect in the coffee and not a defect in the machine. Default settings cannot be calibrated for every individual profile. Your calibration takes 3-4 shots and remains valid for the entire time you are using the same coffee.
The 3 variables of an automatic espresso machine
Every fully automatic espresso machine controls three parameters you can modify:
Strength (power, aroma) adjusts the pressure and duration of extraction. The scale varies: 1-3 on Philips LatteGo and LatteGo Evo, 1-5 on DeLonghi Magnifica and Magnifica Start, 1-4 on Siemens EQ. A higher level means more intense extraction and a more concentrated flavor.
Grind (fineness) controls how finely the beans are ground before extraction. On DeLonghi Magnifica and Siemens EQ, you find it as a physical dial or a dedicated menu. On Philips LatteGo, the grind is fixed and cannot be adjusted independently from strength.
Cup volume determines how much water passes through the coffee. Less water means a more concentrated espresso. More water means a more diluted lungo.
The basic rule: adjust one variable at a time. Two simultaneous changes make it impossible to identify what produced the effect.
Step 1: the first reference shot
What you adjust: Nothing at this step.
What you do: Start the machine and let it reach operating temperature: at least 3-4 minutes. Pull a shot of espresso at the machine's current settings, at the default volume (usually 40-60ml). Observe the color and thickness of the crema, then taste immediately after extraction while it is still warm.
What you are tasting for: Sour and thin means under-extraction. Bitter and lingering means over-extraction. Balanced, with body and a sweet note in the finish, means the default settings are working and you can move straight to adjusting the volume. If the machine was not fully warmed up, the first cup may taste different from the next one: repeat the shot before drawing any conclusions.
Step 2: adjust the strength
What you adjust: The strength level in the menu or on the machine's dedicated button.
Target: Increase by one level if the first shot came out sour or thin. Decrease by one level if it came out bitter or astringent. Recommended starting points: on a 1-3 scale (LatteGo): level 2 for CORE, level 3 for EXPLORE and VISION. On a 1-5 scale (Magnifica, Siemens EQ): level 3 for CORE, level 4 for EXPLORE, level 3-4 for VISION (VISION does not always benefit from maximum strength).
What happens at extremes: Strength too high produces a dominant bitter taste and an astringent sensation that lingers on the palate. Strength too low produces a pale cup with no body. One level up or down is enough for a proper evaluation.
Step 3: adjust the grind
What you adjust: The grind setting, if your machine allows it to be adjusted independently from strength. On Philips LatteGo, this option does not exist: skip directly to the next step.
Target: Coarser means faster extraction and a sourer taste. Finer means slower extraction and a more concentrated, more bitter taste. On DeLonghi Magnifica with a 1-7 scale: start from position 4 for CORE, position 5 for EXPLORE and VISION. On Siemens EQ with a 1-6 scale: position 3 for CORE, position 4 for EXPLORE and VISION.
What you need to know: A grind change does not take effect immediately. The first shot after an adjustment still uses beans ground at the previous setting. Evaluate the result after at least 2 shots at the new setting. Do not change the grind and the strength at the same time.
Step 4: cup volume
What you adjust: The amount of water that passes through the coffee, set in the menu or by pressing the button at the desired volume.
Target: Standard espresso: 40-50ml. Ristretto: 25-35ml, concentrated. Lungo: 80-120ml, more diluted, suitable for CORE coffees with chocolate notes consumed without milk. EXPLORE and VISION coffees perform better at 35-45ml than at 60ml: at smaller volumes, the characteristic notes remain concentrated and perceptible.
What happens at extremes: Too much volume dilutes the body and erases the characteristic notes. Too little volume concentrates bitterness and covers the more delicate notes. A difference of 10-15ml between two shots is enough to observe the effect.
Step 5: calibrating for milk-based drinks
What you adjust: The espresso base volume and strength for cappuccino and latte.
Target: Base for cappuccino or latte: 40-50ml espresso, not lungo. Milk attenuates acidity and dilutes the body of the coffee. A lungo at 100ml as the base for a cappuccino produces a watery drink with no character. A CORE coffee at strength 2 and 45ml produces a consistent cappuccino with notes of chocolate or caramel. An EXPLORE coffee at strength 3 and 40ml adds a perceptible fruit note under the foam.
What happens if the base is too long: The cappuccino comes out flat and the coffee becomes hard to distinguish under the milk. Reduce the base volume to 40-45ml and increase the strength by one level.
Troubleshooting common problems

Once you have found the settings that work for your current coffee, write them down. The next coffee in the same category will require little or no adjustment. If you switch to a different category, start from a single shot at your existing settings and adjust from there.
Good settings reveal what the coffee has to offer. An EXPLORE profile, with more pronounced acidity and distinct notes, rewards careful calibration more than a neutral profile does: the difference between a correct and an incorrect extraction is easier to read and easier to correct.
